To Simon Schama, one of the presenters, human civilization isnt just about technological inventions, but also “those moments when human beings first began to create things that

14、were not purely for food or shelter, but were there to be seen, and to leave a mark of their existence for future humans to witness and admire”, he said. In fact, by comparing science and liberal arts, were drawing “an artificial line” between the two. But to some of the greatest innovators in histo

15、ry, this line never existed in the first place. Leonardo da Vinci, for example, was just as successful a scientist as he was a painter. Then theres Steve Jobs, who, despite being an engineer, was also an artist on the inside. “Its in Apples DNA that technology alone is not enough its technology marr

Apeel, a start-up in Santa Barbara, California, has created a way to remove lipids from several popular crops and transform each type into a powder. Dissolved in water and applied to fruits or vegetables, it forms an edible(可食用的) ba

22、rrier to lock moisture in and microorganisms out. Farmers can apply a version of the solution in the field, or distributors can use the rinse (冲洗) on the packing line, extending a fruits shelf life by days or even weeks. The FDA recognizes the process as safe, and earlier this year it was approved f

23、or use on organic produce. Giving shoppers more time with their fresh food is one purpose. But Apeels higher goal is to fight food waste and reduce the number of refrigerated trucks and ships that race between fields and stores to deliver food at its peak. The technology can also allow more crops to

24、 be delivered to more places farther and farther from where theyre grown. “You can imagine a world without seasonality of fresh produce,” says James Rogers, Apeels CEO and a materials scientist.
